Play around with the spices that you add to the vinegar; you may want to add cinnamon, fennel seeds, coriander seeds, allspice, cloves and so on; add or omit as you see fit. This goes well in a good club sandwich, alongside cold meats, or, as the name implies, it is really best just with some good bread and butter.
