Pickling is another way to preserve the harvest, and there are many methods of doing this.
One of my favorites is a simple recipe for picklese, or pikliz, a quick pickle packed with heat that can be made in a flash with a few fresh vegetables from the garden. All you need is some vinegar and salt, and the relish is ready in a couple of days. The vinegar from this recipe can also be added to sauces and other dishes.
