Escabeche can refer to many different types of dishes, but the common thread holding all of them together is that they are usually marinated in an acidic mixture. These jalapeno pickles are a simple, classic take on this style of cooking. I played around with the flavors a little, as I didn't want to spend too much time on them - I mean, the sun is shining and I definitely don't want to spend more time indoors than I have to - so the recipe I used, from 'Preserving Made Easy' is one of the simplest I could find.
