Well, you’ll be happy to know that pickles are no longer the weird green thing you peeled off your Big Mac patty. From classic gherkins to spicy kimchi to refreshing gari (pink pickled ginger), pickles are fast moving up in the foodie scene.
We’ve been dipping our toes in those briny waters, too. Our recipe developer Meg (who proclaims “pickles are my absolute new favorite thing!”) created this recipe for tangy, tart green beans which make both a gut-stimulating appetizer and healthy salad topper.
With a garlic clove thrown in there for good measure, the limp burger pickle of your childhood will be just a distant memory as you tuck into these crisp and crunchy beans. Note: they will lose their bright color once pickled, but they’ll taste infinitely more delicious!
