    Cinnamon Cucumber Pickles! I stole this recipe from a Taste of Home Magazine cooking forum. I just couldn't pass it by, when looking at the recipe, my mouth just started watering like crazy. Especially now it is Autumn. Cinnamon and Spice EVERYTHING! Use 25 large cucumbers or enough to make 2 gallons of cucumber rings. Peel and remove seeds. Place the cucumbers in a large enough vessel to hold them all. Cover the cucumbers with 8 1/2 quarts of cold water and 1 cup pickling lime mixed in the water. Let stand in a cool area for 24 hours. Then drain, rinse, and cover with cold water. Let stand 3 hours, then drain. Simmer cucumbers 2 hours in a kettle with 1 cup vinegar, 1 Tbsp.. powdered alum, 1 oz. bottle of red food coloring. and enough water to cover all the cucumbers. Drain and make syrup with the following ingredients. In a kettle place in 10 cups sugar, 2 cups vinegar, 1 large bag of hot cinnamon candy, 2 1/3 cups water, 8 cinnamon sticks or 1/2 cup of broken pieces Bring syrup to the boiling point but do not actually boil. ***Pour over cucumbers rings and let stand overnight in cool area, Next day drain off syrup and heat the syrup. Pour back over rings. ** start where this symbol is, Repeating this step of draining the syrup and reheating two more days. Then pack cucumber rings in canning jars. Heat the syrup and fill the jars. Seal with canning lid and rings. Cold pack in a water bath canner until the water just comes to a boil.
