It is that time of summer when you have that over abundance of all the vegetables. I didn’t think this time of summer would actually come. It is now here in its full-grown glory and I am enjoying it immensely. One of the things I love about this time of year is the abundance of Fresh vegetables. Mostly in particular is the cucumbers. It doesn’t matter where I get them either from my garden, or from a friends garden, there is always an abundance of cucumbers. I could make pickles all day long if I could. I love any kind of pickles and if they are easy to make like these refrigerator pickles then I am all over it!
This recipe is spicy, garlicky and full of heat. You also don’t have to can them, just let them sit in the refrigerator and do their thing.
