I know that many people would like to make homemade pickles but are reluctant to try because the process seems overwhelming. It’s really not that complicated. And although the recipe does take nine days, only a little time is required each day.
Pickling the old-fashioned way — slowly, in a crock — yields a crisp, delicious pickle that you can’t purchase anywhere. (In years past, the finished pickles were served straight from the crock instead of being canned.) If you don’t have a crock, a heavy plastic pail with a pouring spout will work well, too. One bonus is the wonderful smell. The process fills your house with the delightful aroma of spices — and the promise of the most delicious pickles you’ll ever eat!
